Grape and chicken salad bites

These are so simple to make that your kids could do it! Witlof cups filled with a tasty combo of grapes, barbecued chicken and goats cheese, these are a great party food or light lunch. Yummo!

Ingredients:

  • 1/2 tbsp honey
  • 1 tbsp white wine vinegar
  • 2 tbsp extra virgin olive oil
  • 2 witlof leaves washed, separated and trimmed (should have about 18 usable leaves)
  • 1 cup barbecued chicken meat
  • 40g blue cheese, crumbled
  • 1 tbsp chives, roughly chopped
  • 1/4 cup roasted walnuts
  • 1 cup red grapes, halved

Method:

To make the dressing, whisk together the honey, vinegar and olive oil, season well and set aside

Place the witlof leaves on a platter or large tray. Divide a little chicken meat evenly between the leaves, then divide the crumbled blue cheese, chives, walnuts and top with a tablespoon of grape halves.

Drizzle ‘bites’ with dressing and serve immediately

Notes:

  • Keep everything separate and combine at the last minute to keep the witlof crisp.
  • If you're not a fan of blue cheese you could substitute it for feta or goats cheese instead.
